Marzipan Policy
Marzipan (the company) is 100% pro-marzipan (the confection). The two are otherwise unrelated except for our founder's, slightly unhealthy, fascination with marzipan fruits.
Minimum 50% almond. Below that it is fondant in a costume, and we will say so.
It should be shaped like fruit. Palermo settled this several centuries ago and we see no reason to reopen it. A pig is permitted on seasonal grounds.
On pairing: Sauternes, Tokaji, or a well-aged oloroso. Not a big red, or you will lose the almond entirely and everyone will be sad.
We recognise both Toledo and Lübeck as protected designations and decline to arbitrate between them. Correspondence on this subject is read with genuine interest and answered very slowly.
Persipan is not marzipan.
Amaretto is marzipan in liquid form. We will not be looking into what it is made from.
